Audio exchange project

I thought how an exchange project can motivate teenage students by providing a context for real and meaningful communication. However, it was necessary to use only a cassette recorder for such a project.

I decided to record the students and send the tape to students in a non-Russian speaking country.

Planning

At that point in the syllabus the topic was «Healthy Food». I decided to encourage them to make a radio programme about traditions and Russian Cuisine. We would send the cassette to other school and hopefully they would send recordings to us, too. The students would work together in pairs to answer questions about various special dishes and then we would record the interviews.

After the initial language input (topic-based vocabulary and appropriate structures) and practice, we were able to complete the project within a week.

Preparation

Brainstorming

I introduced the idea of the exchange project to the students and told them about the radio programme. «Russian Cuisine» was the topic, which interested them most of all. . Then in groups they wrote a spider gram of healthy and unhealthy food. They then talked about the dishes they had enjoyed most: Olivier salad, pancakes, jellied dishes and traditional Russian desserts.

We would send the audio of Russian Cuisine and traditions to other teenagers in a different country since they would find the content informative and this would promote meaningful communication.

Pair work

Students began by sharing information with each other about the 2 days they had chosen. If they were unsure about something, other students in the class helped. In fact, all the necessary research was conducted in the classroom. I simply monitored and helped with vocabulary and pronunciation where necessary.

Questions

Since the radio programme would be in the form of an interview, it seemed appropriate to tell students to prepare questions. These questions would form the basis of the interview. Students were encouraged to include some questions based on factual information and some designed to elicit their personal opinions. Then each student prepared 3 or 4 questions which they themselves would like to be asked , and equally importantly, to which they knew the answers. In pairs, they checked each other's question forms and corrected any mistakes while I monitored.

Recording

Before the class I recorded some traditional Russian folk music onto the cassette to set the tone of a radio programme.

I set up the cassette recorder in a classroom to ensure audio quality and clarity.

I introduced the programme and welcomed the students to the studio and asked them the questions they had prepared.

Each pair's interview took about 5 minutes to record so the whole recording took around 30 minutes.

Later, they listened to themselves and commented on their performance. I recorded some more music onto the end.

In this case, I played the part of the interviewer because the students wanted to work in pairs. However, a student could also do it, especially if you have an odd number of students in the class. The main advantage of my doing it was that I could echo anything, which was said that was unclear, for the benefit of the listeners.

Conclusion

The task of creating a radio programme benefited the students. They welcomed the opportunity to communicate and they were keen to share information about special meals in our country. Moreover, they were motivated to use the target language and communicate effectively. After hearing the recording, it was clear that they were proud of their achievement.

Introduction

Teacher Dear friends! . The lesson Audio exchange project is the most interesting. Our students will take part in discussion that deals with presentation of Russian Cuisine.

On behalf of the participants, it’s my honour and duty to introduce the students - Ann, Mary, George, Polly, Kate, Lisa, Diana, Dan and Sophie. They know a lot about Russian traditions.

Warm up

T-.What is your association with the word “Healthy food”?

Possible answers: The things that people eat for good health

Lead-in stage- Activating the schemata

Look at the pictures and try to predict the topic of discussion:

Teacher-.
You are what you eat. The link between food and health is in every day but complex issue. Eating habits affect the way you feel during your life. If you are too fat, it’s dangerous for your life. Obesity is a medical condition in which excess body fat has accumulated to the extent that it may have an adverse effect on healthy life. Obesity increases various diseases, particularly heart disease, type 2 diabetes, cancer and others. Obesity is dangerous for our health.

Any food eaten between meals we name a snack. Snacks may be healthful or not. Doctors recommend eating a well-balanced diet daily. You should also watch your weight.

Doctors don’t’ recommend cookies, cakes, sweets, beer, chips, sandwiches, hamburgers, chocolates and soft drinks for a snack.

How about you?

Do you follow a healthy balanced diet?

What are your eating habits?

What does a meal begin with?

Who was the author of the Oliver salad?

Do you know ingredients of the Oliver salad?

What are pancakes made of?

What Russian desserts do you know?

Teacher: Now I’m going to ask you each to make a very short presentation for the students

Will you listen and decide which of the meals described you would most like.
Student1 - -Hello everybody. Glad to meet you. People can’t exist without food.

It’s very good that you are interested in Russian traditions connected with meals.

S- What Russian tradition would you like to tell us about?

S- According to Russian tradition, a meal begins with the appetizers, for example a variety of salted and pickled cucumbers, cabbage and mushrooms, also soaked apples and marinated garlic. The routine feature of any Russian feast is the Olivier salad. It consists of potatoes, green peas and cold veal or chicken and dressed with mayonnaise.

S-What was Oliver?

S- He was a Frenchman, who kept the Hermitage Restaurant in Moscow more than a century ago. He was the author of that salad.

S_-What are the other popular salad in Russian Cuisine?

S- Vinaigrette is another Russian-style salad, based on boiled beetroot diced.

Boiled carrots and potatoes, salted cucumbers, chopped onions are added. The salad is dressed with mayonnaise or sunflower oil.

S- Jelled dishes are very popular in Russia, aren’t they?

Student2 –You are absolutely right. Boiled fish, meat or poultry is covered with decorative pieces of vegetables, fruits, mushrooms, and spices are added to make the dish more attractive. . Many Russian-cruisine restaurants offer jellied sturgeon, jellied calf’s tongue and a jellied assortment of turkey, ham and ox tongue.

S- What dishes are eaten with horseradish?

S-2 -Studen is usually eaten with horseradish. It is the name of a Russian dish made of veal, beef or pork boiled to a soft and tender state. The resulting thick broth is mixed with chopped meat and cooled until it jellied.

Student What is the traditional Russian soup?

Student 3- Soup makes an important part of Russian meal. The traditional Russian soup is shchee(fresh cabbage and meat), borshch, rassolnik(kidney and salted cucumber soup), mushroom soup .No two recipes are the same for borshch and shchee. But the most popular is the soup in season- okroshka and cold beetroot soup.

S- What are the French terms for some Russian meat dishes?

Student4 –Many ways of cutting and cooking meat came from France, that is why they have French terms: antrekot, eskalop, file.

S- What is the classic dish on the Russian table?

S-Roast suckling pig is a classic festive dish on the Russian table. The traditional method was to roast the pig on a baking tray in the oven. It was cooked with the head left on, basted frequently with oil or butter and served with buckwheat and sometimes with a hot sauce.

Student3 -I would like to add, that Alexander Grigoryevich Stroganoff gave his name at the end of the 19th century to a dish – beef Strioganoff. Stroganoff lived in Odessa and had a very good cook who was either French or French-trained. Beef Stroganoff is a dish made of meat cut into strips and cooked in sour-cream sauce.

S- What is the Russian counterpart of Italian ravioli?

Student 5 Italian ravioli or Pelmeni is another Russian cookery, which has its history. Under the Mongol yoke pelmeni became established in Siberia and the Urals and gradually spread on all the territory of Russia. Nowadays there is a great number of recipes and variants of them. Traditional mixture of beef, pork and elk is used to make minced meat. It is interesting that the whole ceremony of making pelmeni exists in the villages of Siberia. There is a local tradition there that the families gather at the table once or twice a month in winter and spend the whole afternoon to make a vast batch of pelmeni. The women make the dough and chop the meat. The men do the folding. The traditional form is ear-shaped, but they come in all the shapes from square to triangle. Then pelmeni are frozen and kept in sacks in cold pantries.

S- What do you know about mushrooms in Russian cooking?

Student6 –Russian cooking makes greater and more varied use of mushrooms than any other cuisine in the world. They are eaten raw, dressed with herbs, cooked into soups and pies, baked with cream.

S -Which Russian dishes would you recommend to an English visitor?

S- I think soft, pressed and red caviar is the hit of every festive table. The great Russian fish are freshwater fish, headed by celebrated sterlet from the river Volga. They include several varieties of sturgeon and over a dozen different salmon. Of the extensive salmon family fera (trout) – sig- is still known to some people as «the Tsar’s fish». They are served hot and cold, smoked, in aspic or stuffed, fried, marinated and the like.

S- What is your opinion about milk products in Russian Cuisine?

S- A large variety of milk products are used in Russian cooking : a sort of dry, granulated cream cheese called tvorog, thick sour cream called smetana and several types of sour-milk products of the yoghourt type. Smetana can be used with almost anything: we can dress soups, meat dishes, strawberries and apples sliced up with it. It is also used on pancakes and drunk by the glass ful with or without sugar. Smetana is also an almost universal flavouring sauce. Smetana is made from cream and contains2,5% of protein, 20-40% of fat, lactic acid. Kefir is a dietary beverage made from cow’s milk, yeast and lactic acid bacteria. Ryazhenka is a sour milk product made from baked milk.

S- What are bliny(pancakes) made of?

Student7–Pancakes are made of wheat, buckwheat or milled and served with black and red caviar, cream butter, lightly-salted fish and sour cream. Pancakes is a popular hot dish in Russia. Pancakes come not only as appetizers but also as desserts with, jam or honey.

S- What dish is based on semolina?

S- Guryevskaya kasha is a dish based on it

S- How is it cooked?

S-7 Boiling milk and cream are poured over semolina and the mixture is left to stand for 15 minutes. Then the semolina is sliced, milk skins are sandwiched in between the layers. The hole is then covered with jam or honey and sprinkled with nuts, candied fruits and spices, and pieces of fresh fruit are put on top. The more layers and ingredients, the more delicious the dish is. This dessert dish was made in the honour of the victory over Napoleon in the war of 1812.

S-What Russian desserts do you know?

Student 8–Many Russian desserts are prepared with fruits and berries, for example, baked apples with vanilla and vodka sauce or apples baked with honey. Also popular are forests berries with whipped cream, homemade curds with berries, fruits, honey and whipped cream, cranberry kissel with ice cream and raspberry liqueur. Kissel is usually made from fruit or berry juice and potato flour.

S- What about drinks?

Student 9–As for drinks, Russian cuisine offers you its original beverages: kvas and zbiten, and a lot of different fruit and berry beverages. Kvas is a beverage made from rye bread and water-fermented by yeast. There are a lot of sorts of kvas: mushroom kvas, beetroot kvas, kvas with mint, kvas with horseradish and a lot of others. Zbiten is an old Russian beverage made from kvas, cognac or vodka, honey, tea and spices.

Russian people are hospitable and generous at the table. Bread and salt are the symbolic offering at welcome and also a sign of respect from host to guest. Hospitality is a typical trait of character of a Russian.

Teacher- Very good. Thank you very much for this interesting talk
